That's very close to the S-o-W (Shower-on-Wheels) design that I did a while ago:

I think Chris is quite right about swapping the toilet and shower pan - it also stops having to half climb over the portapotty to get into the shower.

I would be surprised if you can find the counter depth to turn the stove lengthways - but that's not a problem as you should be able to fit the stove top over the fridge.

One possible glitch with this layout is that, if the front of the body is curved like a T@b, there is sufficient depth for the fridge high up near the counter, but not further down near the floor, where the front of the body comes further back.
