Ok I understand the router direction. I was thinking that you could step it down and nibble at it rather than gouge it out.

You almost never want to make a full depth full cut in a single pass using a router.

The techniques are different for freehand routing than for routing with a router mounted in a table and using a fence. For freehand routing, you can take "smaller bites" by lowering the bit if you are using round over, cove, and chamfer bits. This will not work for most other router bit profiles though. If you have a router with a plunge base, you can index your cut depth on the tool. If your router is a fixed base, you will need to set the bit depth, cut all the edges at that depth, lower the bit depth, recut all edges, and so on until you get to the final depth.
