new. cargo trailer. NM ---> OR

Been lurking on the cargo section of this forum for a couple months. lots of great info thank you to everyone here. Picked up a v-nose 8.5 x 16' x 7.5'(tall) Pace american enclosed cargo trailer.
doing a minimalist conversion on it and taking it back to oregon. I'll be living out of it this ski season on mt. hood, teaching snowboarding, and riding everyday.

so far i have insulated the floor, the front wall
hung two windows.
laid down horse mat for flooring above the insulation.

plan...
2" insulation on the walls
1.5" insulation in the roof
the front wall in 1" covered with HardiBacker, an air gap and corrugated steel.
the v-nose space will have a small wood burning cast iron stove

no solid plans as to how i will design the interior, cabinets, tubular shelves with flat webbing for above storage, fold up bed?
steel counter top around stove area (non combustibles)

i'll get some photos up and if i figure it out, a time lapse of the progress thus far.

Cheers
