iv'e built a toy hauler (beds,tv,fridge, microwave, etc) out of a 14x8 cargo and hauled many bikes many miles. like you, my biggest fear is something coming loose and damaging a bike. a camera inside, and one on the back of the trailer would be added peace of mind.
my trailer is very wide and changing lanes and not knowing if something is back there is a worry that a camera would alleviate, also backing up with the trailer would be easier.
my trailer has no windows, it is a double edge sword in that i would like the added light and the ability to see out, but then curious people can look inside and decide they want whats inside.

People peeking in was a concern, but, to be without curtains would be.......uncivilized. :D
