Galley, floor to hatch notch.

I realize most of you work off full sheets of ply so these circumstances arnt usualy thought about much but as I'm fitting my galley floor as a separate piece where does the floor usually finish in relation to the hatch notch (witch I havnt cut yet btw).
I plan on the rear skin of my lower section to have a fold up inside the galley to cover the edge of the floor and thus allowing any water entry into either area there. I'm thinking of allowing 10mm and this around what my hatch notch will need to be at a guess.
Any thoughts or advice would be greatly apreciated.
Oh and the typical galley floor is actualy the counter top on my build

Well its done I went for 10mm at this stage.
