Minimum coats of paint - PMF

Any suggestions on a minimum number of coats of paint? Not trying to be cheap, but, the weather is turning here and the first coats (2 so far) will take a few days to dry. The canvas was very thirsty! One gallon plus about 16oz of water to coat it twice. About 80 sq. ft., so less than 200 sq ft per gallon; very thirsty. I'm not opposed to six or more coats, but, just wanting to know what is sufficient for winter storage under cover.

It seems to me that once the canvas is saturated, then it would be no different than any other exterior surface.
So... I'd say one or two coats once you are 'painting' instead of filling in the canvas and starting from a consistent sealed surface.
Modern high quality exterior paint is a marvel.

Thinner fabric = less paint. When putting the paint into the fabric it isn't full until the surface is glossy after 20 min. After that use the expensive paint (instead of oops) to cover with the color you want. Do the color coat after the pmf dries.
I find two cover coats is good.

My hatch took one of primer and 4 top coats but i had rolled tb2 over the canvas as i installed it aswell

Thanks for the responses folks. I am at four coats tonight. That's TBII under the canvas, one coat of exterior flat at about 80% paint to 20% water. Then another coat of flat at 80/20. Then two coats of satin slightly thinned. The weave is filling very well. If it were only warmer and drier here I would be making better time, but, time is all I have so all is well. supposed to be high 60s this weekend, yahoo! Hope to get my final finish color before Sunday and finish up.

Then two coats of satin slightly thinned. The weave is filling very well. If it were only warmer and drier here I would be making better time, but, time is all I have so all is well. supposed to be high 60s this weekend, yahoo! Hope to get my final finish color before Sunday and finish up.

I did almost exactly the same,tb2 over canvas,1 primer 4 top coats

The following show six coats, the final two being the finish color. It looked a little too bright for my taste under florescent lights, but, in the sun it is a little more subdued. Texture at six coats is just right. It is well protected and I like the show through of the canvas a bit.

I didn't take my test sample to full finish, but the impression I got was that the following would be totally adequate;
2/3 TB2 1/3 water
canvas
(allow to dry fully)
primer coat (Zinsser 123), allow to dry overnight
Scuff to remove little fuzzies (at this stage I was more than pleased with the subtle texture, similar to, if not a bit softer than what TimC shows)
2nd primer coat to reseal bald fuzzies, allow to dry overnight (although the the tech data allows recoat after 1 hr)
two color coats (assuming one would not cover fully)
