If I did not have 10' and 12' kayaks, I would seriously look at inflatibles. They are great for ventures with your trailer. I designed my CT to carry these kayaks in through the barn doors of the CT.

I have a 17ft sea kayak, and am giving thought to building a small jon boat... Would love to have something for duck hunting and fishing with the kids. Should be able to car top something like that
My build, 5x8 modified benroy "Smiles to go". Started April 2nd 2015, first trip August 2nd 2015.
We bought a Long Haul Mark 2 folding sea kayak to take with us on our teardrop camping trips that offer good paddling opportunities. They collapse into two bags that fit easily in the back of our Subaru Forester. http://longhaulfoldingkayaks.com/wordpress2/boats-2/the-mark-ii/ They don't give them away, but they're incredibly seaworthy.
I've had thoughts about designing a jon boat that fits the top of my trailer. I'd need to figure out a way to load it on top but I'm sure I could find ideas on line.
I am very happy with the pair of Oru Coast kayaks (16 feet long). Touring kayaks. No roof rack needed. They weigh only 35 pounds each and will fit in most cars and teardrops. They can hold enough gear for an extended camping trip can go long distance.
The Oru Coast is fast on the water. I clocked mine with a GPS and had no problem keeping a 3.5 mile per hour speed on the water. Can be used on lakes, rivers, open water, and pretty rough water (depending on your skill level). Very rigid when assembled. Great compromises for a folding boat. Very simple to assemble. only a few parts. I have owned a dozen different kayaks over the years and this one is a good folder (for me).
I like it better than a skin and frame folding kayak I owned in the past and its much lighter. I owned the Oru Bay 12 footer, which is great for day trips and only weighs 27 pounds. but sold them and purchased the Coast when it went into production. I prefer the longer length, capacity and speed of the coast. Its a seaworthy boat.
