Did you add an additional layer of insulation below the ceiling members, or is just taped well so I can't see the members in your pictures. If there are 2 layers, how did you attach a ceiling head-liner if there is one?

Yes - people are very surprised! We find ourselves having an "open house" at nearly every campground as people walk over to see the inside...haha. Yes, we did build the cabinets and seats over the wheel well. It was pretty easy, just took some planning with measurements etc to get it right. We fastened all of our millwork to the walls and floors with small L-brackets you can get at Home Depot for $0.59ea - made our life a lot easier.
For the insulation, we just used the foil tape on the cross members so it would hide them. We kinda screwed up by not planning for a full-covered ceiling, so now we are just going to place 2'x4' panels on the ceiling with reveals between each panel. It should give me a bit of architectural detail.
