I went to the Shasta Lake gathering this year and saw a few tables mounted to receivers and decided to add a table. I had been using a 2' x 4' folding plastic table for additional galley space but I figured the receiver mounted type would be easier on uneven ground. I have a 2" receiver in the center of my trailer but using that would block the hatch of course. The rear frame cross member is 2x2 HSS. I had planned to use stabilizer jacks mounted in the ends of that tube and did a few times. I eventually went to using 2 scissor car jacks from the wreckers mounted on the underside of the trailer. Those work well and now that I have a table mounted off the trailer, I use the stabilizer jacks most of the time to avoid the table shaking with somebody moving inside the trailer.
The front end of the table had a 1.75 x 1.75 piece of birch that slid inside the 2x2 HSS for a tight fit and the back end of the table has a folding adjustable length leg. There is a shelf hanging below the table from nylon cloth at the ends of the shelf. It all folds up and I toss it on top of the bed for travel. On a 3 day stay with lots of rain, the birch swelled up inside the HSS and I had to saw it off. Later at home had to drill holes through the birch and let a heat gun blow air through it for a couple hours before I could hammer it out from the other end of the HSS. I had worried about swelling but never thought it would be that bad. Now I have a more loose fitting piece of birch with a tee nut and a hand knob with bolt to tighten it into place for use. It is off to the side so the hatch clears it. It makes a great L shaped galley that would easily rival the counter space in a big 5th wheel. I think Cooking in the outdoor galley is the best part of teardrop camping.
