Looks like excellent progress!

Does the lower edge of your hatch rib clear the apex of the galley profile as it swings through the hinge pivot point? This has hung up several builders with extreme teardrop "points" and hatch profiles that curve well under to the floor. I would hate to see you catch that snag this late in the build with all of the great progress you are making.

If it clears, then great. If not, then you could either change the rear profile slightly; shorten the hatch and build in a fixed lower 'bumper wall' turning the floor area into a low bin; or make a short lower clam shell hatch that swings up to meet the main hatch.

I haven't really put the hatch through proper testing but when I held it up it seemed to clear. I figured I'd radius the bottom edge of it gave me fits.

That's a good point. I'd really like to get the outer skin on first. Kind of hit a wall of sorts by second guessing my next steps. Trying to find acceptable switches, finish out the cabinets, figure out the doors, and what I will do for the finish.

I bought my windows but built my doors.. Not sure how you're visualizing yours aesthetically but this is how I did mine.. Haven't ever had a problem with water getting in even after highway driving through a few CRAZY scary torrential storms..
