Nothing like an old thread coming back to life with my second cup of coffee on a blue-sky morning to motivate me to add my thoughts.
Here are my first and last builds. They're similar.

I don't roll the front in because I have storage under the headboard (of both) and a bottom curve would inhibit that space. Besides, I mount a flat-backed tongue box up there.

With her, I brought the galley profile out about 6" and back in to allow the countertop to be within 5" of the end of the floor ––and to give me enough space to install the stove at 90º.

I always thought the Benroy profile did a great job of galley access.
