You could try a starter "sponge" with warm water, yeast, flour and no salt. Once the yeast gets going, a little Lionel Richie might help. Add your salt and the rest of the flour. Salt can mess with your yeast. Your 24 hour cold proof may also be working against you. It is great for gluten production. Chewy thin NY style. For crispy/flakey go quick and dirty. Your sponge will give plenty of levening. I would throw in a little honey to feed the yeast in the sponge for insurance. Take it with a grain of salt. I remember how that was, too. Making a 14.5” rectangle in a perfectly good roof. I felt the same for drilling holes for solar panel mounting bolts, too. But butyl tape has kept things dry now for 6 years with no issues.
