I can't imagine trying to build anything these days. You'll get that first sigh of relief in when you get all your holes addressed, insulation in and walls back up.
Regards to do or not to do the floor, I saw some comments about how "easy" it is to do it later. Depends on what "easy" means to the writer. Pretty much all things were easy for me when I was 50, now over 60, NOTHING is easy.

Grummy , going with insulating the floor while it's out. I'm pushing over 65, nothing is easy to me also. Which is why we're doing a CTC, and getting out of the mini-van conversion. Things just don't move like they used to anymore.
Glad I found all of those ventilation gaps before I did the water test. Caulk all of them then do the water test.
Onehoser, I've seen some of the interlocking workout mats, that's a thought too. But for sure insulating.
Found foam, some at the blue box, some at the orange box. And some 5 mm revolution plywood. It will make good cabinet sides, Real light weight, looks like mahogany.
Made that little van work today.
