Spending the day preparing. There's potato salad, cheesecake and fudge to be made, corned beef to be cooked, last minute floor sweeping, etc.
My contact up in the desert country dropped off some camel back strap on Thursday, so I've cut it into medallions and packed it for the freezer this morning.
I reserved about a pound and half of diced meat from the small end of the strap - I see an experimental green chili dish on the winter horizon.
Beautiful meat.
