Not sure what your AC looks like, but if you can route the intake to take air from outside the cabin that will help with the freezing.

Open your roof vent about an inch or two and turn the vent fan blowing positive, that is, pushing air in from the top down into the cabin. Gap all windows open an inch, too. What this does is bring in warm air to be pulled into the return air in addition to the "cooled" air already inside. This tells the A/C unit it needs to keep working. Remember, the 5K window shakers are meant to cool an area 10 times the size of the interior of most teardrop campers. The additional exterior air "tricks" the unit into thinking it's cooling a larger space. Yes, the unit WILL cycle on and off more, BUT you'll get cool, dry air.

You might have to experiment with fan speed and window gaps until you get the right balance of inside and outside air for your camper. For my tear, vent hood is open maybe 20%, fan is on 2nd lowest speed, and my side windows are both gapped one inch. Use clothespins to hold up your curtains so the "extra air" can flow out unobstructed through the screens.

Hope this helps,
DJ

The coils freezing generally mean low freon or not enough airflow. I had to supplement airflow.
