Dutch Oven Pineapple Pork

Several folks asked me for the Pineapple Pork recipie I made at the North Meets South gathering last weekend. So.... here it is.

8 boneless porkchops
2 cans of pineapple chunks in pineapple juice (not heavy syrup)
1 jar Marachino cherries
1 1/2 cups Italian salad dressing
1 1/2 cups brown sugar
8 Tbsp soy sauce
Salt, pepper and garlic powder to taste
Cornstarch as needed.

Dice the porkchops into 1" cubes and grill. Be careful not to over cook them. You just want to brown them up a little. After grilling place the pork in the Dutch oven.

Start your charcoal. While waiting for the charcoal, mix together, the juice from the pineapples (save the chunks for later), Italian salad dressing, brown sugar and soysauce. Season the mixture with salt, pepper and garlic powder. Thicken the mixture with cornstarch. Be careful, you want to use just enough cornstarch to make the mixture sticky.

Pour the mixture over the pork. Add the pineapple chunks and the entire jar of cherries and stir. When the coals are ready, bake at 375 degrees for one hour stirring and turning the pot and lid every 15 minutes.

Serve over hot rice and enjoy!

It's about 2:30PM our time, and I'm heading to Publix (supermarket) soon to buy the ingredients to make this. Not in a DO, but in the oven. I'll sear the pork on the grill first, though.

Laredo--I'm doing your sauce TOMORROW, but I have to do this one first.

You see, I'm watching game 3 of the Sox-Yankees series, and us Yanks are totally kicking ass here.

Time to start cooking:

Yanks finally won, 13 to 5.

3rd victory over the Sox in 3 games.

And in 3 games, the Yanks scored 39 runs.

Yeah, it fits... like a turd in a punch bowl. (Guess that could be a recipe , ouch , yes, I wrote it :shock: ...sorry couldn't resist...bad, bad me)

With all the replies, looks like everyone else is out camping, OR they are Sox fans.

Sorry for the hijack.

I made the recipe, but mine didn't come out that good. The pork was a little tough, and that might be because I didn't par-grill it on the Q (raining), but instead, I seared it in a pan. Also, maybe the cut of chop I got was different.

Plus, doing it in a regular oven in a pyrex might make a big difference, since its not "sitting" on hot coals. Finally, and this REALLY sucks--we don't have gas down here, so all of our ovens are electrical.

The sauce was delicious though, and I put the leftovers in the slow cooker this morning, real low. Maybe that'll tenderize the meat a bit.

Sorry for the delay in replying. We've been away all week on our annual Cape Cod trip. Of course we stayed the teardrop at Coastal Acres campground in Provincetown.

Ray and Debby - I used a 10" DO to make the recipie.

Mary - Thanks for the kudos. I love the turd comparison. I find it particulary amusing when discussing the Yankees. More in this later...

Ira - The Dutch oven with its heavy tight-fitting lid acts a little like a pressure cooker. Also, since the lid keeps the moisture in the pot, your meat is much less likey to dry out. I'm just curious? Did you have a cover on the Pyrex dish?

You really ought to get yourself a DO. The way you love to cook, you'll really enjoy it.

Wendy wanted to get rid of me for a while Friday night so she could do some shopping in P-town. So, I parked myself in a bar and caght part of the second game of the double-header. Watching Damon hit that homer hurt Fortunately, the martinis helped ease the pain. The game was tied 7-7 when I left.

Oh and by the way -- THE YANKEES STILL SUCK! Here in New England we root for two teams, the Red Sox and whoever beats the Yankees.

BTW - On top of every thing else I want to buy for my "future" Teardrop, I now want a DO. I can't even cook in a real kitchen, but looking at all these yummy pic's if DO recipes, Iv convinced myself I can cook outdoors.

Again, BTW, Tom I have your WWW on my Favorites. Iv been referencing it A LOT for researching my build. Thanks for documenting your build! It's been a big help now and in the future for whenever I "actually start building"
