You can look at the distro list at http://lwn.net/Distributions/ for a server distro. There are lots of them. Many of them are non-graphical, but a few aren't.

Am I going to be able to set this thing up or can I put the Desktop version on too or do I need to do that anyway?
I haven't figured out the code terminology yet and I think that's what gives me so much trouble. I've seen the cheat sheets but never downloaded on but the little popup thingy you write the code in confuses the hell out of me. Never understood how to make it do anything.
I want this for a website server for writing sights and debugging before uploading so I want it to be as much like my server as possible.

OK let's have it. Anybody want to let the cat out of the bag? What's the secret to this? I keep hearing it's supposed to be easy.

The Linux system CentOS is a repackaged release of the Red Hat Enterprise Server. You can look at it at http://www.centos.org/
