4x8 is a common size. You'll have to do some serious looking for 4x10 or 5x10 plywood. And then then only come in 1 thickness. 3/4".
You might want to consider scarfing or lapjoints to get the larger sizes. Or consider stick building and cover the joints with strip, or fill with a filler. Whatever you decide to do, have fun!
