I may just have to fly in and settle this once and for all. I'll be the special uninvited taste tester. I'll be very thorough and taste each entry. At least once.

One should respond Amen whenever he hears another saying a blessing, 8)
even if the blessing does not contain G-d's name, such as the "May the
Merciful One be blessed..." in the Grace After Meals or when a Cajun speaks
Truth to Texicans
who speak loudly about their many big things or how great
their BBQ is and the Cajun knows that his BBQ is supreme~

Steve,

Love your post. I never thought of all this talk as being bragging I thought we were stating fact. Anyway look at all the great interest we've stirred up and we're still months away, has to say something about our South Central Gatherings! And no bragging intended but with TonyJ's special secret machine the LCG II will be an outstanding success. It will be a gathering that teardroppers will talk about all year long!

How about some slow smoked Nutria? What kind of wood does one use to BBQ big rats?

:D

...after much experimentation, we find Nutria does just fine when slow roasted over a Cypress Knee fire...it really accents the stagnant swamp taste of the mighty Nutria :D  ;)

p.s. since we have so many from outta the area, we will forego the roasting of any Nutria at this years gathering........MJ

I think the dog he is planning to have "in the fight" is one of those famous Louisiana "Yard Dogs." At least I think that is what MJ called it when we heard one growl last year.
Still graced with two eyes and ten fingers (due in no small part to luck!).

Just when you think a problem is solved, an uglier result replaces it.

uninvited??? You are always welcome. I'll even bring a tent for you. A unopinionated taster would be welcome.

Don't listen to Steve's propaganda after all he is on the left coast and probably never experienced some fine TEXAS BBQ.

Don't get me wrong the cajun's are very fine cook's and I have personnaly tasted the fine cusine they can prepare.
Ya sure can't beat them at cajun food but BBQ is best left to the pro's.
It's very kind of Julie to volunteer to bring the crying towels.

PROPAGANDA ..... eh Image

I have been to Dallas and to El Paso a few times and yes I had red food Image
coloring with a little burnt smoke flavor on meat there.

And Who would be da PRO's @ que .... Mr. Essteve Image ;)

If I get down yur way... I could be arm twisted into giving some of you
Texican fella's another go @ putting proper que onto a plate.

Image:D
My outburst a few posts back was all about ... you Texican fella's ganging
uP on da MadOne even before you got to his place in the sun. With
crow-ings of my que is better than the next Texican in a long list of umm,
all in a row. It was like dogs all with yur tails uP in Texican Stand-Off poses
and all about yur que~

Guys and Gals,

We need to watch out, we are going to get so wrapped up in all this food that we won't be able to get around and admire all the Great Tears that will be at LCG II. We will be so full that we won't be able to do anything but nap.
