Buck, we are working onna head count but with over 60 reservations, we can firgure on between 120 and 150 folks for Saturday night dinner, which is why I am trying to make sure we have around 10 folks cooking up at lest 10+ pounds of meat...oh yeah...tell Charles and Trina to get their butts on up there...or be totally square............

To give the now Q-ing people an idea of what is involved in providing brisket for everyone.

When other food items are being served it takes 5oz to 6oz of cooked brisket per person. Or 1 lb for 3 people.

That's about 50 lbs of cooked brisket for 150 people.

When you smoke a brisket you will loose about 40 percent of the weight. For example in smoking a 10lb trimmed brisket you will end up with about 6 lbs of cooked meat.

So to feed 150 people you will need to smoke 8 or 9 10lb trimmed briskets.

In case there is not enough people smoking brisket, those who are wondering what food to bring you could go by your local BBQ place and purchase 1 or 2 lbs of sliced brisket. Take it home and freeze it in heavy duty foil. And then at the LCG just warm it up over some coals.

...thanks Bob...that is about what I had figured...if we have 100#s of UNcooked meat and lose 40% we end up with about 60#s cooked...should feed the group.........

We will bring a gallon of BB-Q beans. That should get us started. I can't smoke meat worth a darn but if there is something else we can bring just let me know.

WE ARE PLANNING ON BRINGING POTATOE SALAD, AND IF WE RUN OUT OF BBQ, WE CAN FILL UP ON ALL THE SIDES AND DESERTS. MADJACK, I WILL CHECK WITH YOU ON THE 25TH. TO BE SURE WE HAVE ENOUGH MEAT AND IF NOT I CAN PICK UP WHAT WE NEED HERE IN LUFKIN AND BRING IT.

I still ain't figured out how to carry my smoker on this trip. With the 'cap' on my little P/U there just ain't a lot of room for something that size. I may just have to get some sliced brisket from the local smoker & bring it that way (tho I prefer the pork :oops: ) since warmed up pork butt just ain't the same as the day it was cooked.

I'll also cook up a big pot of beans'n ham & a couple of iron skillets of cornbread.

Sorry MJ, know you wuz countin' me in the meat bunch but the logistics just ain't workin' out :roll: . Maybe a few pounds of sliced brisket with a tangy sauce will warm up OK & go with the beans'n ham. The Petit Jean smoked ham available here makes some great beans. My cornbread ain't half bad either ;)

Price of brisket.

Just wondering, the price of brisket from my supplier has jumped this week. I now have to retail for 1.89 lb. What are ya'll paying in your area? Later, Milo.

New Smoker

Got a new smoker today. Just need to know if I can pull two trailers in the state of Louisianna. Anybody know what the law is? I really want to bring it to cook on. Buck :)

Louisiana Road Laws

Size Limitations: Height, 14'; Width, 8'.6'; Trailer Length, 40''; Motorhome Length, 45'; combined length, 70'. Triple towing is allowed if the maximum length does not exceed 70'.

Required Equipment: Safety chain required on trailers over 6,000 pounds, breakaway switch required on trailers over 3,000 pounds, flares or reflective signs, brakes required on trailers with unladen weight over 3,000 pounds.

Passengers are permitted to ride in pickup campers only.

Overnight parking is "as posted" in state rest areas
