I'm not familar with those aluminum panels you are talking about... I have seen SIPS, structural insulate panels. I've even seen homemade ones, constructed from 1/4" luan and 3/4" insulation.
Yes, I think that would work fine if you plan ahead for all the details...
I built up some stick built walls for the weekender... the end result would have been similar to a SIP. But I had the wood backing where it was needed. With a SIP you would have to add wood backing after the fact, and that, is a bit more difficult.
