Hey Thomas,
I looked through your pics trying to figure out your situation, and the only one I saw looked like there was not a spar (yet) where the galley hinge goes. Are you using a hurricane hinge? I am, and my last spar will set perpendicular to the curve of the roof, and on top of the galley wall.
Hope that makes sense, sorry no pictures yet.....
