Undermount or over for the sink?

Not to speak for MadJack, but those catering style pans that sit in the steam trays have a very healthy lip all around because they are actually suspended over the water in the steam pan by their lip. I would guess they are 3/4" for the smaller ones.
They're available in a deeper size and called chafing pans for a chafer.

..at my local restaurant supply, there were many different sizes of serving trays and bowls, in SS with flat bottoms and a lip around them...so they make great sinks, wash basins, ect, ect.
Serving trays were 4/6' deep..bowls were, well bowls.
If you wanted a drain...get a 1" bar sink drain fitting and drill a 1"hole in pan and install fitting...voila, instant sink for under 20 bucks

They sell something similiar at Sam's Club. I am not sure of all the sizes though, have seen them there

Here's an idea....check out West Marine....of course anything having to do with a boat is going to cost more, but they do have all the smaller sizes...however a hole in a steam pan will work., at any rate....I agree, that you will be best off with a top ring, not an undercounter mount........doug hodder

...Woody, you are right, they do sell them at Sam's however the size I needed was the size they never had(go figure) so I went to the restaurant supply and got 1 for the same price Sam's had 3 for(if they had ever had it)
