I wasn't planning on having doors quite that thick -- any recommendations of the door is say 1 In, or 3/4 inch thick?

You can go with the surface mount model from Li'l Bear.

So the mechanism mounts on the inner surface of the door, and the handle mounts to the outside with the shaft going through the door into the mechanism? And the 'striker' mounts to the inside of the tear wall?

That's my understanding, though I didn't use this type. I'm sure others can chime in with their experiences with this type of latch.
