I covered it with 5 layers of marine grade epoxy. Then painted it with latex paint. I would like to cover it in aluminun later. Maybe paint it to match my tow vehicle.

It looks like you did a really nice job on it. The galley is well thought out. You say you aren't a cabinet maker but your cabinets show that you have talent in the building area. I like the knife storage, too.
