I'm a "love my sink and water tank" kinda guy myself, and we cook in the galley. But I think that the freezing issues up north would change my mind and make it not as important. It's about what you want. My water tank and sink preferences were based from past experience living on a small sailboat, fully self contained. The water and it's use is all about the sanitation rituals we are habituated to. I found it was ergonomically best for me to have the sink next to the stove where the water was heated. Also, the sink and the water faucet are next to my coffee pot, and I never have to pick up a 5 gallon water jug that weighs about 40 lbs when full, and set it anywhere. That's my 10 gallons worth....or two cents, whichever you prefer.
