We'll plan on firing up a couple Dutch Ovens for some Jiffy corn casserole and a pear dump cake.


That corn casserole is one of my favorites! I usually take it to lodge when we have dinner there.

Bob & Vicky - "Monster Meat Loafs - Bread
Kurt - Dutch Oven Pork chops w/ carrots, potato & onions
Mark & Pat - Dutch oven potato casserole with kielbasa sausage and onions
Scott & Amy - Spanish Pork Chops - chocolate/yellow birthday Cake
Nathan N - Jiffy corn casserole - pear dump cake
Mark72 - corn casserole
Anybody else??? :thinking:

I guess I have led a sheltered life I do not remember eating corn casserole.

This recipe sound so easy may have to get crazy this weekend

I love it. I remember my mom making something similar to it back when. Paula's recipe is a bit different than the one I nabbed I think over on camp-cook:

1 can cream style corn
1 can whole kernel corn
1 box Jiffy cornbread mix
8 oz. sour cream
1 stick butter
1 egg, slightly beaten
1/2 tsp. salt
1/2 tsp. pepper

Melt butter. Put in 2-quart casserole dish. Add egg, corn with juice and remaining ingredients. Mix well. Bake at 350 degrees for 1 hour.\

Easy Easy Easy. And yes I guess yo could make it in a DO.

I've done this version once in a 10" DO. It was mighty full so I am going to go with a 12" tomorrow. :)

As for extra ingredients, I guess whatever you want. Green onions would add some color and flavor.

I am having a hard time thinking about food for camping when there is soo much snow still on the ground. I can't hardly wait till May!
