Anyone else out there canning veggies and fruits

Hey Gang,

My garden tomatoes are coming in too fast - so I've taken to the glamorous world of home canning. Any teardroppers into canning? How do you incorporate it into your teardrop lifestyle?

We don't can out tomatoes, we blanch them and freeze them. Or we make tomato soup, and freeze that. :thumbsup:

I can a lot this time of year. Just finished three kinds of jam; moving on to marinara & pizza sauce now. Then it'll be BBQ sauce, salsa, peaches, applesauce, ketchup and soup. I might do creamed corn this year...

During spring, I can things like chicken soup, raviolis with sauce, pulled chicken & beans, shepherd's pie and chili ... in individual servings (usually a pint for us). At the campsite, boil the whole jar in hot water for 20 min and scrunch up a (clean but missing its match) sock around it so you can hold it while you eat. Wide mouth jars work best.

A few days effort at the start of camping season keeps us in food pretty much all summer.

canning, freezing, yessir! don't forget the ever popular pickle... cukes,carrots,zuccini,sweet and hot peppers, etc. vinegar makes everything but bacon and ice cream better.

Usually I am canning huckleberries this time of year. However, we had a winter that would not end so the berries are not ripe. :(

I try to stay as far away from the kitchen as I can this time of year. Cynthia has been busy making jams, first from strawberries, then raspberries and followed by apricots. She's also canned green beans this year. We'll freeze corn in a week or two and I WILL help with that. Our tomatoes are very late this year but they will be turned in sauce or salsa, which we can. Then comes the peaches, pears and applesauce.

Nothing like home canned or frozen. Most enjoyable during those cold winter months.

I usually become a veggie after we get camp set up.

I've got a tree full of pears, but I don't know how to can. I thought about looking up a pickeled watermelon rin recipe on the web and seeing if I can adapt it to the pear thang. ...oh if I could bear the heat long enough to pick the pears. Right now, Mr. Squirrel has been "canning" them.

Hummm, pickeled squirrel, I wonder what that tastes like!

Hey Todah,

The folks that make the jars (Ball) have a starter kit, comes with three jars, the caddy that holds them when you're boiling them in the pot, and some recipes. Also, everyone I've talked to recommends the "Blue Book of Canning", both the blue book and the starter kit are at Walmart. I haven't bought the book yet, because I got the canned tomato instructions off the web. Tomatoes are easy to can, because they are acidic one doesn't need to use a pressure cooker. I don't know about the pears.

I went out today and bought more jars, canning a second batch of the tomatoes tonight!

Wife and I will be making some salsa for sure. Some tomatos and a couple other sauces. Can some sweet corn probably if we don't eat it all first!

Done 14 quarts of hot salsa in the last week and just finished (literally) 14 quarts of hot baby dills. Tomorrow is bread and butter pickles and maybe some "normal" dill hamburger slices.

We totally missed the boat with canning corn this summer. Just too hot and too busy. Looks like corn in a can this winter :-(

Ate all our bean fresh. They are going to come from a can too this winter...

Mine never stick around this long, but I wouldn't go longer than a year shelf life with home-canned tomatoes. Unless they are heirlooms, tomato varieties these days aren't as acidic (and therefore don't hold as long) as they used to be in the 50s.

Todah - pears make great jam, pear butter, and pear sauce (like applesauce) and they are easy-peasy to can. I make jam and butter from whole or coarsely-chopped pears in the crock pot cooked down until they're the right consistency, and then put it through a food mill to strain out the seeds and skin. You can probably make pear sauce in the crockpot, too, but it's also just as easy on the top of the stove. Then you pour it into jars and process 10 min. in a boiling water bath. Let cool, and wait for those lids to pop. Voila - you've canned your pears.
