...in the words of one of my mentors...I'm late, I'm late for a very important date................
I shoulda put this thread up a couple of months ago BUT, it's been a long tough summer around the ol' hacienda.....
...so I guess y'all are gonna want me to cook for Fri nite and at this point, the simplest thing would be to cook a gumbo similar to last year...to that effect, I will put an ingredient list and y'all bring it and I'll cook it...the Dog(Casey that is) will keep track of who is bringing what, just post it here......
20#s boneless, skinless chicken breasts...

20#s smoked sausage...various brands are OK, a Cajun version would be better

...3#s of tasso

15#s of chopped (fresh/frozen) Okra...or combination thereof......................

10-15#s of white or yellow onions......

half dozen LARGE green bell peppers..........

4 bunches of celery.........

32 oz jar of chopped garlic

10-12 bunches of green onions

10#s long grain rice

I will supply all the various and top secret herbs and seasonings along with the ROUX(most important part)...bring your own bowl and spoon and we will eat until we hurt ourselves...all ingredients need to be at my site by about 2-3PM on Fri for this to work out for supper before dark...ingredients should be coarsely chopped when they arrive at my site, it would be appreciated as well.
Hopefully :worship: the Bertrands will bring their mega rice cooker again...we will do our best to have this feed ready by 5PM......
Oh, yeah, any one else wanting to bring something not listed above, salads, french bread, crackers and DESERT are always welcomed................
