WFCO 8725P or WFCO 8740
Which one would be best for my needs??

I have a WFCO-8725 (25amp). Didn't see a need for anything larger. Nice thing about any of the WFCO or Progressive Dynamics power centers is that they can be used to distribute AC using circuit breakers too.
Best way to figure out what you need is to add up the amperage of the 12V components you plan on using.
For example:
Fantastic Fan 4000 draws about 3A (on high)
My
LED fixtures draw only 15 mA each (.015A)
So I figure even if I have the fan on high (3A), and 10 LED fixtures turned on (.15A), my total current draw will only be 3.15A. Not even close to the capacity of a 25A supply. The advantage to having a larger supply is ability to charge a dead battery faster, and it gives you the ability to expand your electrical system beyond what you initially plan for.
