I'm going to run 31's to match my Jeep TJ and the biggest issue I have so far is just the cost. It's about $600 to match the rims and tires to the TV, whereas the cheapy 15 inch trailer wheels and tires from TS are currently about $145 each, or less than half the cost. Wheels and tires have been the single biggest cost on TPCE so far. (Brakes were next on the big $$$ list, and the plywood bill is looking like it could go up past that very easily.)
If you are doing a rear hatch galley, you need to watch your final counter height and under counter face frame suport rail. If your suspension/frame height is too high you will not be able to slide your cooler under the counter without having the counter be too high to be comfortable.
