I have a couple of small DOs (6-in and 8-in), so this works with a Smoky Joe Weber Kettle. I just put some sand in the bottom of the kettle, to spread the heat from the coals so they won't burn through the metal, then use my chimney starter to start the coals (setting it in the Weber while the coals are getting hot). When the coals are hot, I put a third of them in the bottom of the Weber, put my DO in over then, and the rest of the coals on top. So my kettle is both a DO stand to get it up where I can work, and a wind break.

I am, of course, using what I have. Use a grill that you have. I think a broader, shallower grill would work well for a larger DO.
