Jim knows better about Arizona as he lives there and I live in Illinois...
As far as warping is concerned, it can happen in any state.
It is caused by uneven drying, so if you can keep the moisture content roughly the same on the inside as it is outside, your wood should stay flat.
Baking one side in the hot sun while the other side is in the shade, or worse yet, in contact with something damp (ground, concrete, etc.) will certainly cause the wood to change shape.
If you can keep the trailer under a shade structure, and provide for free air flow from out to in (open windows/doors) you stand a good chance of maintaining what you started with.
