Spatchcock Chicken

We saw this episode of Primal Grill awhile back where Steven Raichlen spatchcocks a game hen. Its a way to open up the bird so all the meat cooks at the same rate on the grill. We tried the recipe and it was wonderful! The game hen comes out juicy and flavorful. We now spatchcock chicken as well.
