So, I have this amazing double smoked bacon that I get in slabs from the local smokehouse

and I thought "how would that work in a waffle dog?" So I cut off a couple of sticks

and cooked them up,

got things ready outside, (note the enthusiastic helper)

lay down some batter, loaded the bacon,

and got to cooking.

I've determined that lower heat and regular turning gives you that nice golden colour.

And boy, did they come out tasty.

I had one of those hmmm... moments while watching the Food Network the other night. Lynn Crawford was serving up chicken and waffles and I thought "how about chicken and waffle dogs?"
I soaked strips of chicken breast in buttermilk overnight, dredged them in cornmeal with salt and pepper, and baked them off in the oven. The batter was supplemented with shredded aged cheddar and the finished product was drizzled with a sweet rum sauce.
I'm quite pleased with the result, though I think I'll try using thigh next time.
