Can you tell I'm ready for summer?

I tried to do some jerky in the smoker this afternoon. After 2 hours the meat was still cold and limp. (But it had plenty of smoke in it.)

So I brought it inside and I'm finishing it in the oven.



Now all that's left is to start a campfire, get out a couple of camping chairs, and let the snow fall on us... (Yes, it's snowing again!)

Hmmmm maybe I'll wait a few months for the campfire and the camping chairs...

It's been the opposite story in north Texas. Right now the temperature is 70 degrees. I started smoking some spare ribs this morning. They just finished the "3" of the 3-2-1 method. I've been fighting the wind a little bit to keep the kamado at around 225 degrees. (The temperature is trying to climb.)

I feel your pain Mike!
Yesterday I put 3 slabs of Baby Backs and 2 Pork butts on my pellet smoker. It took 13hours to finish 2 7LB butts. Plus my pellet usage went way up. Go figure, today it's much warmer out and maybe I would have had better luck.

What cut of meat are you using for your Jerky? That is one thing I have not tried smoking yet.

I use flank steak, and I cut it with the grain. Nothing else even comes close...

I was thinking about making some jerky last week. We have an electric food dryer so good any time. The recipe I have came form a canoeing and Kayaking cook book and with slight modifications I have been making it for 20+ years. Depending on how much pepper goes in it is 20 min jerky, you can't taste much else for that time. I made six lbs (starting weight) for the trip west last summer.
There is however one problem with this recipe, when I make it the doors are open (it is over powering) and the screen door that is down wind in the house is covered in flies

Hm-mm... are you using sweeteners that are attracting the flies?

I'm using apple juice, but don't seem to have a fly problem...

Just the post I need to see as I sit here waiting for part two of " The Blizzard of OZ". That jerky looks good. Ill have to try that out when I'm done digging out.

Wasn't too bad. We got about 7 inches of heavy wet snow ( round one was dry powdery stuff). The snow blower really strugled with this stuff. I'm glad I got it though ( I thought for sure there would be no snow because I bought it). Took my son out for driving practice after we got done moving snow for the neighbors. My parents are homebound until the county come out with the drift breaker. They have 4 ft drifts across the road. Now, back to the jerky.

Packing for a Jerker's meet in Florida leaving tomorrow. Every time I go to Fla. I seem to follow a cold spell so temps look like sunny and low 60's but that is better than home so away I go.
