One inch is probably overkill, but it would certainly work. Rather than buy expensive one inch ply, you can double up some half inch. If you want to save a couple of pounds, you could run two inch wide strips of the half inch material around the bottom of the table rather than two, full sized pieces of the half inch. That's what I do when building counter tops. Gets rid of all those narrow rip cuts that stack up in the shop.
