Hinges are the harder part to find if you want a more typical interior mount trunk hinge. Grabbing the parts from a car may not work due to how they are typically mounted, but many makes will work if you are willing to alter your hatch hinge mounting areas for them. Older Jeeps used an exterior mount one some people have used.
Nearly any gasket will work if you give it a proper water drain grove.
Car type trunk latches are available, both new and second hand. Many junk yards have them. Look for ones that have the key remote from the latch. That way they can be controlled by a rod and lever. Car door latches can also be used. With remote actuated latches it would be possible to have a latch at each bottom corner, and a central control lever operating both of them. Many car door latches look like they could be mounted with a couple modified L brackets. I'd use ones that used a loop rather than a bolt for the pin. They usually give you a flat plate you can mount with screws that could be mounted to a surface. A bolt type would need access to the back side to tighten the bolt. Grab the loops from the vehicle you grabbed the latches from.
