Having carved many airplane parts from foam (for many years now )... like nice streamlined fuselages and other parts , we can assure you that it’s not only practical , but really easy ... Foam works nicely with hot-wire, knife, rasp and sandpaper , and you can do it in sections and glue those parts together ... just so no one large area is too daunting .

If you make a mistake carving , you can cut out the offending area, and add a new piece to try again ... fool-proof !!!

Ps. it is Messy ... Always amazing how such a little bit of foam produces so much dust and bits ... Everywhere !!!...
