Has any one used an all steel for a conversion? Some thing like this: http://cmtrailers.com/cargo-mite/
I know it would be heavier than a traditional Wood Paneled.
Any thoughts?

Weight might be an issue. Also, cutting the steel panels for windows, water and electrical service, etc. is probably going to be more difficult than cutting aluminum.
