My "Can't go wrong Brisket" recipe....

Postby WarPony » Sat May 12, 2007 10:20 pm

Step 1: Place brisket onto smoker and sprinkle garlic salt all over said meat. I used plum tree wood to smoke the meat.

Image

Step 2: Let brisket smoke for about 2 hours......

Step 3: Pull it off the smoker and place it in a stainless or glass dish and put a foil cover over it to keep in the moisture. I always run my finger toward the center so any water will drip back into the pan. Place it in the oven set at around 200 degrees and wait for about 6 hours. I like the 200 setting because it's just hot enough not to boil the water away too quick but will cook it quicker.

Step 4: 6 hours later, you get this "Pull Apart Brisket with a Fork"!! I also like to call it Brisket Spaghettii..........

I have the same question. Do you take it out of the smoker, put it in the pan, cover it up and just let it sit on the counter for 6 hours? Or do you cook it in the oven more? Don't understand how it gets more tender just sitting there.

CRAP!!! I totally missed that when I posted. After it is put in the glass dish, it is put in the oven at around 200 degrees for the 6 hours. I'll go back and edit. Thanks for the heads up  .

My boss had a plum tree that blew down last year and he cut it up for me.

I'll use oak.

You think we're tough ... imagine what would grow in that meat, and then what it would do to your tummy, if step 2 didn't involve a 200F oven. Seriously.

But yeah -- that looks really tasty.
