Rick, he had been partying for a few days in my garage from the little stinky presents he left me! He could have been the extra flavoring in Madjacks gumbo though...

we had a baby one waddle into our garage a few years back. a couple of buddys were over having beers when this little guy walked in. turns out this possum loved "hot fries" snack sticks and hung around all night getting fed. he came back every night the door was open looking for snacks, we ended up naming him clarence, its a sad day when your pet possum quits coming by. guess he found better food at your place.......

I think this was Clotile, Clarence's cousin. It looks like this one had been eating from the cat and dog food bags I had in the garage. They are no longer in the garage either!

POSSUM ON RICE
1 fat possum
1 1x6x8 cypress board
3 quarts fine Wild Turkey whisky
3 large poot fruits(sweet tatesr for the yankees amongst us)
3 large onions
1 large pod garlic
1 bunch celery
1 large green bell pepper
2 cups uncooked rice
open first quart and take a healthy belt...
clean possum and nail to cypress board...
take another belt...
saute onions/pepper/garlic/celery...remove from pot...
place possum on board in pot...
one more belt, if you please....
peel/quarter sweet tatter and place around board...
add saute'ed veggies...
one mo' shot...
open second quart of Turkey juice and pour over all in pot...
take another shot...
bring all to a simmer and liberally and constantly baste possum with Turkey juice...this should go on for about 2 hours...
take several shots while this simmers...you should finish the first bottle of Turkey juice about the time it is done...
cook rice(if you don't know how to cook rice, you shouldn't be reading this far)...
open third bottle of Turkey juice...pour a liberal amount in water tumbler...
put a good serving of rice in bowl...poor gravy over rice...
remove possum from board and throw said possum away...
place some taters in bowl...
eat the board, the rice and gravy and wash all down with liberal servings of Turkey juice...
...and there ya have it....BON APPETIT.................
madjack 8)

p.s. this is a real favorite of General BonVivant and his trusty dog Phideaux............mj

Why Jack, I do believe that is the same receipe that my daddy used for cooking game. In fact, I used to think he was the happiest cook in the world! Now I know why there was always a bottle of Wild Turkey next to the stove!

Wild Turkey was the first thing I learned to drink and it all began with hunting. Brings back good memories! ;)

That stupid, ugly opossum was in my backyard last night!! I went outside to let the dog do it's business and something was in the in the flower bed by the door. I thought it was Jasmine, my neighbors cat until it popped out on the sidewalk.

That is the second time that's happened.

That damn opossum's days are numbered!!
