Hi Matt,
The idea was to have an almost queen-size bunk to hold 3 kids, but still have a counter/galley area.
So the bunk slides forward out of the way of the galley when the galley is in use, then slides back so that the galley space can be used as increased legroom for the kids when the bunk is in that position.
The concept was developed in this 'members designs' thread:

and the drawings were designed by Mike S., who originally designed the Weekender.
There are other builds on the site where people have used a shelf, also where people have used a fixed bunk. This was just a new idea to make dual-purpose use of limited space.

you could use piano hinge to fold the bed out of the way and not intrude into the gallery
