I'm not excited about an inside galley, but my wife thinks it would be nice to have in inclement weather. Goodness knows we've seen some of that while camping! Same is true of the port-a-potty. Both put the bed and odors too close together for my liking.
My desires for a standie or slouchy would be:
Permanent bed. (I hate having to make and unmake a bed every day)
Bed must be 78" long (I am 76" long). 80" would be ideal. Access from either side a plus!
Dinette for two (mostly to play cards in inclement weather)
Clothes closet for hanging at least one suit and one dress (we have taken our teardrop as our rolling bedroom, and had to dress up in somebody's house later)
Roll out storage under the permanent bed for Camp Chef stove, umbrella, etc.
Storage for most cooking utensils, dishes, pots and pans.
Inside sink, though not necessary, would be nice.
Ability to store in a garage. I've been thinking about creating a mount for a torsion axle that would allow it to be unlocked and rotated to raise the tires into the body, lowering the ground clearance to a few inches for storing in a garage. It would waste a bit of interior space, but if it saves me $100 a month storage fees, it might be worthwhile.
