Good deal! You, and other Builders, are why I put that Product up occasionally. Plus, the Reviews on Amazon are glowing. So far as I know, you're right about the Venting issue. If I'm wrong on which Product does have the exterior Venting option, you'll find other, similar WHs pretty quickly via Surfing.
I put an Electric 'Flash' WH [40 Amp - 208 VAC] in our Mountain House. Flow throughput is always key. Too little flow throughput, and most all these WHs shut down for safety reasons. However, the Reviews on the Eccotemp say Water temp is widely adjustable. I point this out because of the lower flow produced by RV Water Pumps, and the tendency to take on/off 'Military'-style Showers. BTW, this Electric Flash Heater worked fine at the standard Well Switch cut in/cut out pressures of 30 PSI and 50 PSI. My point is that Flash Heaters can tolerate pressure excursions well IF Water throughput is held somewhat stable.
A-R me, I'd likely put a nice Ball Valve on the WH output to allow adjustment to just the 'right' flow level, given Pump pressure 'x' and Plumbing Conductance [Pipe size] 'y'. Accumulators allow 'storing up' Water Pressure between Pump on/off cycles [the point of adding them], just as the Pressure Tank on our Well System[s] do.
Dometic, and other RV Fridges, vent to the exterior, but are inside the TT Interior volume. All have louvered Doors to allow Air intake to Fridge Coils, and to Air feed the Propane Mode Flame required. Some 'Safety First', gasketed take-off on that concept would allow the Eccotemp to vent safely outside from part of a Closet, or sealed-off Cabinet. This same concept is used when venting conventional Batteries placed inside a TT/CT to the outside. A Propane/CO/Smoke Detector would be mandatory, of course. Emulating the RV Fridge 'Box' concept allows ensures an uninterrupted Air source to the Eccotemp Flame w/o Air starvation.
Despite having picked up a nice lil TT and 'free' unused Generator in the deal, I'll be following this Thread. I still want to trick out my own, 'ultimate', Stealth CT someday. I absolutely agree w/the OP that RV Showers are wanting. For me, a tricked-out Murphy Bed that allows 'recycling' Space, as common throughout Japan [note the Futon], would be a CT given. In this regard, I follow a few 'Small House' Threads for design ideas.
