My Dad had CI, Mom had CI...but somewhere along the line it was deemed 'unhealthy' in the 80's or 90's and Mom stopped using it...My dad died in'79 at 37, so maybe that had something to do with it...
ok, not funny, but people stopped using CI. Non-stick was "better" or "modern"..even though the fumes kill pet birds (doesn't that say something right there??)
As an adult I got non-stick cookware...but always knew Mom's CI griddle was the bomb at making pancakes..esp. sourdough. Things even have more flavor with CI. And I don't mean they taste like Iron. I think they get cooked more evenly and better..and it preserves the original flavor.
I think our ancestors were on to something with the CI..it was all they had, but it was the best. My Mom's Mom was the one who got the crazy idea that new stuff was better, and T-fal was king when it came out..but studies show that the chemicals are really not good for us, and can cause cancer...I'm not sure anyone ever got cancer from cooking in CI.
I plan on being here a long time just to jerk everyone's chain, so I'm switching to CI when I can
